Last week we had some friends over for dinner and I made one of my favorite meals: slow-cooked, pulled-pork tacos - YUM! But, since it was kind of a Mexican food theme, I thought I would try a Mexican-type dessert: Tres Leches, which literally translates to "Three Milks," because of the three types of milks used in making the creamy sauce that is poured over the cake. It's so simple and SOOO delicious, and the recipe was requested - so here ya go!
TRES LECHES CAKE
Prep Time: 20min + Overnight Chilling
Cook Time: 30-35min
Ingredients
CAKE
1 - boxed white cake mix (or you can make a white cake from scratch)
4 - eggs
2 - teaspoons vanilla
1/3 - cup vegetable oil
1 1/4 - cups water
TRES LECHES SAUCE
1 - 14oz can sweetened condensed milk
1 - cup heavy cream
1 - cup evaporated milk
FROSTING
1 - 8oz container Cool Whip
1 - 1.4oz Package Instant White Chocolate Pudding
1 - cup milk
TOPPING
3 - Tablespoons powdered sugar
2 - Teaspoons ground cinnamon
Instructions
1) Preheat Oven to 350 degrees Farenheit. Grease 9 x 13 glass baking pan
2) Mix all cake ingredients until smooth. Pour into greased baking pan. Bake for 30-35 minutes until toothpick comes out clean and cake is lightly golden.
3) While cake is still hot, use a fork to poke holes into the cake. Poke the fork all the way into the cake until you feel the fork touch the bottom of the pan. Do this all over the cake.
4) While the cake is cooling mix together, sweetened condensed milk, cream and evaporated milk. Once the cake is at room temperature pour the entire milk mixture evenly over the cake.
5) In a large mixing bowl pour the 1 cup milk and white chocolate pudding mix. Mix until smooth. Stir in entire container of whipped topping. Stir until completely mixed with pudding.
6) Evenly spread all of the whipped topping mix over the top of the cake.
7) In a small bowel mix powdered sugar and cinnamon. Place Cinnamon-sugar mixture into sifter and gently sift over the top of the cake.
8) Cover cake with foil (being careful not to press foil against frosting) and chill overnight.
9) Cut cake into squares and serve chilled.
